High-Fructose Syrup (HFS) is made by converting some of glucose isomerase into fructose. It has good sweetness (almost identical to sucrose / sugar). As a sweetener, it can replace sugar in most of the food applications. Being a syrup makes it superior to crystalline sugar, especially for beverages. It can protect and enhance the flavour of fruits used in jams & jellies.
